Waffles are an absolute family favorite in my house. On weekends we are usually making pancakes or waffles. The kids love helping mix all the ingredients together and then they even love eating it even more. I put this recipe together based on other Belgian waffle recipes I’ve tried. The combination of the banana and cinnamon add an amazing flavor to the waffles. It’s very important that you let the batter sit for at least 15 minutes prior to making the waffles (the longer the better). The flavors get stronger and the waffles taste better after the batter has sat for a while.
Ingredients:
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3 tablespoons sugar
- 1/2 teaspoon fine salt
- 1 tsp cinnamon
- 3 large eggs
- 1/2 cup (1 stick) unsalted butter,
- 1 1/2 cups buttermilk
- 1 tsp vanilla
- 1 Banana mashed
Instructions:
1. Melt butter.
2. Mix melted butter, eggs, buttermilk, and vanilla
3. In a separate bowl combine flour, baking powder, baking soda, sugar, salt cinnamon. Mix in mashed banana.
4. Add wet ingredients to dry ingredients. Mix and let sit for 15 minutes.
5. Warm up waffle iron. Cook according to waffle iron instructions.
6. Serve with maple syrup.
