Shrimp Tacos

Crispy Shrimp tacos

Ingredients
  

  • 12 shrimp Shrimp Uncooked works best
  • A bunch vegetable oil
  • 12 corn tortillas
  • shredded cheese

Batter

  • 1/2 cup corn starch
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup beer preferably mexican

Chipotle Crema

  • 2 tbsp mayonaisse
  • 4 tbsp sour cream
  • 2 tbsp lime
  • 1 tsp chipotle sauce

Instructions
 

  • Mix the flour, corn starch, salt and baking powder in a bowl
  • Add the beer and whisk it in
  • Dry the shrimp, and then place it into the batter
  • Heat the oil in a pan
  • Test the oil temperature, with some batter, then add a batch of the shrimp, don't crowd the pan
  • Flip the shrimp, they should be golden brown on the bottom

Chipotle Crema

  • Mix the sour cream, mayonnaise, lime and salt in a small container

Assembly

  • Melt some cheese on the tortillas
  • Chop up some white onions, cilantro and slice a lime
  • Cut the shrimp so a few pieces can fit into the shrimp
  • The order should be tortilla -> cheese -> crema -> shrimp -> onion -> cilantro
  • Enjoy
