I love fish Tacos. This recipe is reminiscent of my favorite fish tacos from Oscar’s Seafood in San Diego

Shrimp Tacos
Crispy Shrimp tacos
Ingredients
- 12 shrimp Shrimp Uncooked works best
- A bunch vegetable oil
- 12 corn tortillas
- shredded cheese
Batter
- 1/2 cup corn starch
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup beer preferably mexican
Chipotle Crema
- 2 tbsp mayonaisse
- 4 tbsp sour cream
- 2 tbsp lime
- 1 tsp chipotle sauce
Instructions
- Mix the flour, corn starch, salt and baking powder in a bowl
- Add the beer and whisk it in
- Dry the shrimp, and then place it into the batter
- Heat the oil in a pan
- Test the oil temperature, with some batter, then add a batch of the shrimp, don't crowd the pan
- Flip the shrimp, they should be golden brown on the bottom
Chipotle Crema
- Mix the sour cream, mayonnaise, lime and salt in a small container
Assembly
- Melt some cheese on the tortillas
- Chop up some white onions, cilantro and slice a lime
- Cut the shrimp so a few pieces can fit into the shrimp
- The order should be tortilla -> cheese -> crema -> shrimp -> onion -> cilantro
