Easy Pad See-Ew

Pad See-Ew is one of our favorite dishes.  It’s very easy to make and its delicious. My husband and I love Thai food.  One day we hope to plan a trip to Thailand  just so we can eat!!! Oh and see all the beautiful beaches and historical buildings!   We are huge Bravo TV Top Chef fans, we never miss an episode. When Top Chef was in Las Vegas they went to a  restaurant called, Lotus of Siam that is suppose to have the best Thai food in the US.  So the next time we were in Las Vegas, we decided to visit the Thai restaurant for dinner.

Lotus of Siam is this restaurant way off the strip in some shopping center.  It definitely did not look amazing from the outside but the food was DELICIOUS!  The best Thai food we’ve ever had.  We’ve now been twice and will definitely stop there every time we are in town.

Unfortunately, since going to Lotus of Siam, now most local California thai food places just don’t cut it.  They just aren’t as good or authentic. So, I decided to take matters into my own hands and try to learn how to make one of our favorite Thai food dishes, Pad See-Ew.  After trying different things, I found a recipe on a website called shesimmers.com which specializes in Thai recipes.  The recipe is quite good and now is a family favorite, and all the kids will even eat it!!!

Now the biggest challenge with the Pad See-Ew recipe is tracking down a couple of the ingredients. I struggled for quite a while to find the fresh rice noodles.  I would use other noodles (dry ones) but it just didn’t taste as good.  Then a friend told me they sold fresh noodles at a Asian speciality market called 99 Ranch.

The other issue I had was finding the “Sweet Dark Soy Sauce”.  I had a Filipino market that sold it in So Cal but in the Bay area, I wasn’t able to find it, so I final just looked on Amazon and ordered ABC Sweet Soy Sauce there.  Also, I never can find Chinese broccoli so I just use whatever broccoli I can get my hands on.

The best way to make this recipe is to watch the video.  These chefs walk you thru the process.  Now, before starting with the egg, the Wok has to be VERY HOT, so be careful.

**Do not make more than 2 serving at a time for the best taste**

Ingredients

1 serving (feeds 2):

1. 4 ounces sliced meat of choice, marinated in:

  • 2 teaspoons light soy sauce
  •  1 teaspoon of baking soda

2. ⅓ cup vegetable oil

3. 8 ounces of fresh, flat and wide rice noodles (not dried)

4. Two large egg

5. 2 tablespoons of sweet dark soy sauce

6. Combine:

  • 2 tablespoons oyster sauce,
  • 2 teaspoons light soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons white vinegar
  • 1 medium clove of garlic (peeled and minced)

7. One and one half cups of Chinese broccoli  or broccoli florets

Instructions

Watch video above for detailed instructions.

  1. Marinate chicken and boil for about 10 minutes.
  2. Combine sauces listed above.
  3. Heat oil in wok.
  4. Once wok is VERY hot, add 2 eggs and scramble.
  5. Add noodles and sweet soy sauce.  Stir.
  6. Mix in boiled chicken and broccoli.  Stir in combined sauce mixture.
  7. Cook on high until noodles, broccoli are heated.
  8. Enjoy!

 

Cooking Notes:

  • Make sure to boil marinated chicken (or preferred meat) first before starting the noodles
  • You can possible skip the boiling the noodles, if you have very fresh noodles
